Basic recipe
Beat 3/4 cup softened butter and 1 cup sugar with mixer. add 1 egg, 1 teaspoon vanilla, and 1/8 teaspoon salt, beat until smooth. **With a spoon stir in 2 cups flour to form a stiff dough. Divide dough in half. Wrap each half in wax paper forming a 1 1/2 inch cylinder or square shape. Refrigerate until firm. Cut dough in 1/4 inch slices. Arrange on greased cookie sheet. Bake 350º for 12-15 minutes.

Orange Poppyseed Cookie
Add 2 tablespoon poppyseed and 1/2 teaspoon orange extract before adding flour


Raspberry Thumprints
Add 1 teaspoon lemon extract and 1/2 teaspoon Almond extract before adding flour. Roll each 1/4 inch slice into ball. Make a indent into center of each ball with thumb and fill with 1/2 teaspoon of raspberry preserves.


Cinnamon-Pecan Shortbread
Add 1 cup chopped finely pecans before adding flour. Sprinkle each 1/4 inch slice generously with cinnamon and sugar before baking.
