2 cups cooked spaghetti squash (see below)
3 tablespoons butter
3 tablespoons heavy cream
1/4 cup grated Parmesan cheese

To cook spaghetti squash:
Cut squash in half lengthwise and remove seeds. Pierce skin a few times with a sharp knife. Cover loosely with saran wrap and microwave until tender, about 7-8 minutes. Use a fork to remove the flesh of the squash, it shreds and looks like spaghetti!

To make Alfredo sauce:
In a saucepan melt butter, add cream. Gradually add cheese. Stir until smooth and toss with cooked squash. Top with salt, pepper and additional cheese.
