1 unfolded pie crust
1 lb. ham, diced
4 eggs, hard-boiled
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese
3 eggs
1 cup evaporated milk
chopped green pepper
pepper
little cayenne pepper

Directions:
Directions:
Pre-heat oven to 450º. Place pie crust in a deep pie pan, Bake for 6 minutes. Remove and reduce oven temperature to 350º, Whisk eggs, milk, pepper and cayenne (if using) fold in ham, cooked eggs, cheese and green pepper. Pour into pie crust. Bake 45-60 minutes, or until knife in center comes out clean. Let send 15 minutes, then serve.
