2 lbs hash browns
1 onion, chopped
1 green pepper, chopped
2 lbs breakfast sausage
optional: you can also add ham and bacon
10 eggs, beaten
salt and pepper to taste
1/2 tsp garlic powder
1 - 1/2 cups shredded cheddar cheese
olive oil for frying

Directions:
Directions:
- preheat oven to 375º
- heat oil and fry hash browns, onions and green peppers
- place in a 9 x 13 greased pan
- brown sausage and pour on top of hash brown mixture
- pour eggs over the top of casserole
- season with salt, pepper and garlic
- gently stir to coat the casserole with the eggs
- sprinkle the cheddar cheese over the top
- bake for 35- 45 minutes

*** this recipe can be refrigerated overnight as well ***
