1 cup flour
½ tsp salt
2 tsp. baking powder
½ cup sugar
1 tsp. vanilla
¼ cup butter or margarine, softened
1 egg
½ cup milk
1 qt. strawberries, sliced and sweetened
whipped topping

Directions:
Directions:
Preheat oven to 350º. Lightly spray an 8" x 8" baking dish with low fat vegetable spray.
In large bowl mix together flour, salt, baking powder and sugar. Add vanilla and margarine and mix well.
In a separate bowl, beat egg, add milk and mix together. Stir in with rest of ingredients. Pour into baking dish. Sprinkle top with 2 tbsp. of sugar. Bake for 25 to 30 minutes until golden brown. Set aside to cool. Cut into serving pieces. Top with sweetened strawberries and whipped topping.

I have never found a better recipe for strawberry shortcake! This is a moist and delicious cake! Perfect for a summer desert!
