2 Tbsp. vegetable oil
1 lb. beef stew meat, cut in 1/2 in cubes
1 onion, chopped
8 oz. fresh mushrooms
3 carrots, chopped
1 - 14.5 oz. can diced tomatoes
¾ c. quick cooking pearl barley
Salt and pepper to taste
Penzey’s seasonings of your choice

Directions:
Directions:
Heat the oil. Add beef, onion, mushrooms, and carrots and sauté 6-8 minutes or until brown. Add diced tomatoes including liquid, beef broth, salt, pepper and any other seasonings. Bring to a boil. Reduce heat and simmer on low 30 minutes or until beef is tender. Add barley and simmer 15 to 20 minutes more or until barley is tender.
