skinny dry noodles or elbow macaroni, whatever amount you want
½ c. chopped onion (optional)
bacon grease
salt and pepper

Directions:
Directions:
1. Cook noodles or macaroni to desired tenderness but not undercooked.
2. Drain but do not rinse. The starch is what will make them crispy.
3. Melt bacon grease in nonstick or cast iron skillet.
4. Pour in the drained noodles or macaroni, mix in the onion (if using).
5. Fry over med-high heat, letting them brown on the bottom.
6. Using a pancake turner (spatula), get under the noodles and carefully turn them over to brown the other side.
7. Serve with beans; navy beans with the noodles, pork-n-beans with the macaroni.

Mom usually diced a potato and cooked it with the noodles. If there was leftover macaroni, she'd crack and mix an egg into it when she re-warmed it.
