2 lb. ground beef
1 small onion, diced
2 eggs, beaten
salt, about 2 tsp.
pepper, about 1 tsp.
saltine crackers, crushed (25 or so)
milk (a splash)

Directions:
Directions:
1. Combine ground beef, onion, eggs, salt and pepper.
2. Mix well.
3. Add crackers and mix well.
4. Add milk. The lower the fat content of your beef, the more milk you'll want to use.
5. Form meat mixture into a loaf shape.
6. Bake in covered baking dish for about 1½ hours at 350º.

Mom always baked meat loaf in a large covered roaster pan with potatoes and carrots around the meatloaf. I still make mine that way.
Chris McNiece - Mary Kay and I use bread crumbs instead of crackers. And, we top the meat with ketchup or barbecue sauce to keep it moist.
