1 large onion
3 cups rice (jasmine,long grain,brown or white basmati)
11/2 lbs frozen or fresh, firm white fish
Salt to taste
1 level tbs masala
1/2 to 1 tsp cumin seeds
1 tsp vaudevo ( dried onions- Indian recipe)
1/2 tsp mustard seeds
Canned tomatoes or 5 fresh tomatoes
4/5 cloves garlic
3 large chillies
1 tsp sugar
1-2 tbs Lemon juice
2-3 tbs oil + more for frying fish
Cilantro to garnish
3-4 eggs boiled and halved.
1/2 cup Dahl parboiled

1. Marinate cleaned , washed fish pieces in lemon juice and masala

2. Brown onions in oil. Add garlic, seeds, 1 tsp masala and sauté

3. Add tomatoes and sugar and cook for 5-10 minutes

4. Add fish and chillies
Parboil rice .
Fry fish.
If adding Dahl parboil too.
Boil 3 to 4 eggs.

5. Layer in large Corning dish or pot as follows:
Dahl- then rice- then fish- and top finally with eggs some fried onions and cilantro.
You may add cashews as well as garnish

Initially ‘under’ rather than over- spice as you can always make chutney spicier as you feel your way forward.
