Ingredients:
Ingredients:
1 tablespoon of yeast in ¼ cup of water (with 1 teaspoon of sugar)
4 egg yolks (I do 5)
½ cup sugar (I do ¾ cup)
1 cup milk
½ pound of butter (melted)
1 teaspoon salt
⅓ cup mashed potatoes (boiled and mashed, no additions)
3-3 ½ cups flour (540g with 5 small/normal egg yolks)

Directions:
Directions:
1. Put milk, sugar, salt, butter, & eggs in blender and beat (I beat the eggs and sugar together, then add the milk, followed by butter and salt).
2. Add mashed potatoes and yeast, beat again
3. Slowly add flour until dough is sticky, but does not hold shape in the bowl. It will flatten out. (if you oil your hands and rub the top and dig down the sides, it will not stick very much, if it is too sticky, you didn’t add enough flour).
4. Let rest 10 minutes
5. Grease hands. Turn and knead dough until smooth and elastic.
6. Let rise until double (about 1 ½ hours)
7. Punch down, let rise again.
8. Shape into (walnut-size) balls & grease with lard (I coat my hands in canola oil)
9. Let rise, then form a well in the center
10. Let rise 5-10 minutes.
11. Bake at 425 degrees for 6-7 minutes (turning halfway through)

Personal Notes:
This is Great Aunt Charlotte's kolache recipe. I find this one tastes best with poppyseed or cheesecake filling.
