Rhubarb Dessert Recipe

Crust:
2 Tbls. sugar
1 cup flour
1/2 cup butter
1/4 tsp. salt

Filling:
4 cups rhubarb, diced
3 beaten egg yolks
3/4 cup cream or Carnation Milk

Topping:
3 egg whites
5 Tbls. sugar

Directions:
Directions:
Combine crust ingredients. Pat crust mixture into 8x11 pan. Baket 10 minutes at 350º.

Mix filling ingredients. Pour over baked crust. Bake for 45 minutes.

To prepare meringue, beat egg whites until peaks form. Continue beating, gradually adding sugar. Spread over top of rhubarb and bake until meringue is browned on tips of peaks (6-10 minutes)

This was a favorite when I was growing up. Mom would make it all summer until the rhubarb was done.
