2 tbsp. to 1/4 cup butter, depending on desired thickness and recent diet you may be on.
2 cloves of finely diced fresh garlic
if your adventurous add some finely diced, browned onion bits
1 cup heavy cream
1 1/2 cups freshly grated Parmesan or Romano Cheese
dash of salt (if you are on a salt free diet try salt free garlic herb spice)

1. In a medium saucepan over low to medium heat, melt butter. Once butter is melted stir in minced garlic and sire and cook about 1 minute until garlic is soft. Stir constantly to prevent scorching.

2. Slowly add the heavy cream to the saucepan, whisk until cream comes to a low boil. Reduce heat and simmer approximately 3-5 minutes or until it starts to thicken.

3. Stir in the cheese and seasoning until the mixture is smooth and thick.


You can amp up the flavors for more taste. Sometime instead of salt or garlic I use chinese 5 spice with a oich of sugar and have it over risotto or some other small rice.

This is my favorite go to recipe! There are so many ways you can mix this up , just by changing the cheeses and the spices. If you want a sweeter flavor Havarti is great also.
