3 tbsp. butter
3 tbsp. flour (I use potato, almond or cashew flour - it just tastes better!)
3 cups milk or 1/2 & 1/2
4 1/2 cups Velveeta cheese ( cubed into 1/2" pieces for easier blending)
dash of salt
1 1/2 tsp sugar
pepper to taste or if you don't use pepper add paprika (sweet or smoked)

1. Melt butter in small saucepan then remove from heat.
2. Blend in flour and stir or whisk until smooth, gradually add milk
3. Return to low heat, stir constantly to prevent scorching, just to a boil.
4. Add cubed cheese slowly while stirring to prevent scorching until all cheese is melted.
5. Remove from heat. Add seasoings.
Pour over steamed/cooked vegetables. Sprinkle with paprika before serving.
