2 c. flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 tsp. vanilla
1 c. chopped nuts, optional
2 large eggs
½ c. oil
1/3 c. whole milk
3 ripe bananas, mashed

Directions:
Directions:
Preheat over to 350º F. Coat a 9" x 5" loaf pan with non-stick vegetable spray. Mix dry ingredients in a medium bowl. In a large bowl, mix wet ingredients. Add dry ingredients to wet; mix well. Fold in nuts, if using. Pour into prepared loaf pan and bake for 55 to 60 minutes. Cool 10 minutes and turn out onto wire rack to cool completely. Best served the next day.
