7 oz. bittersweet chocolate, chopped
1/4 C crème fraîche or 1/4 cup heavy cream
2 T dark rum, cognac, Chambord, Grand Marnier, or Kahlúa
1 tsp vanilla
1 C unsweetened cocoa powder

Directions:
Directions:
In metal bowl or on top a double boiler, combine chocolate, creme fraiche andrum. Cook stirring occasionally, until chocolate is melted and mixture is smooth. Remove from heat and stir in vanilla. Cover pan and refrigerate until partially set, about 30 minutes. Place a fine mesh sieve over a plate and press the cocoa powder through with the back of a wooden spoon. Roll the truffle mixture by teaspoon fulls into balls with your hands. Roll each truffle lightly in the cocoa powder, and store in an airtight container in refrigerator for up to one week. Remove from refrigerator 15 to 30 minutes before serving.
