¼ c. raw cashews
15 dried pitted dates
1½ T. cocoa powder
2 T. coconut oil
dash of sea salt
1 c. unsweetened coconut flakes

Directions:
Directions:
In a food processor, grind the coconut flakes into course meal then place in a bowl in the freezer to chill. In the same food processor, grind the cashew into a fine meal. Add the dates one at a time until well incorporated. Add the cocoa powder, coconut oil and salt and process until the mixture begins to form a ball. Take the mixture and place it on parchment paper, pressing it into a square about ¾ inch thick. Wrap the parchment tightly around the mixture and refrigerate for at least 30 minutes. Using a sharp knife, cut the cold mix into ¾ inch cubes. Roll each cube in your hands until they slightly soften and take on a ball shape. Immediately toss the balls into the ultra cold coconut meal and evenly coat them. Balls can be served room temp or refrigerated. Balls cam be frozen for up to one month by storing them in a bag of the remaining coconut flake meal.
