Chocolate Icing for Celebration Cake

1 c butter, softened
1 1/2 c sugar
2 eggs
1 tsp vanilla
2 eggs
2 c flour
1/2 c unsweetened cocoa powder
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 c buttermilk

Directions:

Grease and flour 8" round cake pan that is at least 3" deep. Line base with waxed paper.

In a large bowl, cream butter, gradually adding sugar, beating until light. Beat in eggs, one at a time, beat in vanilla. Sift together flour, salt, baking soda and powder and cocoa. Stir into butter mixture alternately with buttermilk, beginning and ending with flour mixture. Bake at 350ºfor 70-80 minutes or until cake tester comes out clean and top springs back when touched. Let cool for 5 minutes on rack; loosen edges and invert cake onto rack. Peel off paper and let cool completely.

For a 12" cake tier, double the recipe and for a 10" tier, 1 1/2 times.
 

Chocolate Icing for Celebration Cake

6 cups good quality chocolate chips (Kandace says Hershey's are the best)
3 cups sour cream
1/4 cup hazelnut or coffee liquer (optional)

In top of double boiler, over hot, not boiling water,melt chocolate chips. Stir in sour cream and liquer (if using) until smooth. Cover and refrigerate for about 15 minutes, or until of spreading consistency.

The first time I made this cake was for the chocolate lover, Kandace's wedding. My cousin's wife Frances decorated it with chocolate roses and leaves. Since then, it has been made for every wedding, baptism, graduation and many birthdays. It is the most requested cake in my recipe collection and originated in a Canadian Living magazine special in May/June 1988
