Dumplings


Ingredients:

1 lb of beef, cut into 1" pieces (stewing beef or a cheap cut of steak)
1/4 c flour
3 tbsp

1/2 c chopped onions
1 c tomato juice
1 tsp salt
1/8 tsp pepper
1/4 tsp garlic powder or salt

1 c diced potatoes
1 c sliced carrots
1 c sliced celery
1 tsp salt
1/2 tsp Worcestershire sauce
1 tbsp parsley flakes
water, if necessary

Directions:
Directions:
Dredge the beef cubes in flour and brown in oil or bake in a 375º oven.

Add onions, juice and spices. Cover and simmer for about 2 hours on the stovetop or cook in the oven. Stir occasionally and add more jucie and/or water if necessary.

Add vegetables and rest of the ingredients and simmer for another 30 minutes or so.

1 c flour
2 tsp baking powder
1/s tsp salt
3 tbsp. shortening
1/2 c milk

Directions:
Directions:
Blend together the dry ingredients. Cut in the shortening with a pastry blender. Then add the milk and stir until just mixed.

Drop by large spoonfulls on top of the stew and continue to cook, but don't open the lid to peek for about 15 minutes!

As you know, all of these measurements are not the way I make my stew, but the amounts give a starting point. I add whatever vegetables are in the fridge, turnips, frozen peas, zucchini, etc.

I often made it in the oven as it didn't need to be watched so carefuly. But now I make it in the instapot. Saute the meat & onions, add the juice and veggies and pressure cook for about 1 hour. Then turn to saute and add the dumpings. The easiest 1 pot dish of comfort food ever!

The inspiration for this recipe came from my Purity cookbook, a shower gift 54 years ago!
