Panna Cotta Recipe

1 1/2 tbsp gelatin
1/2 c milk

2 c whipping cream
1 1/2 c milk
1/2 c sugar
1 tsp vanilla


Easily doubled.

In large bowl, add gelatin to cold milk and let soften.

In saucepan, combine whipping cream, milk, sugar and vanilla, and bring to a boil. Pour over gelatin mixture and mix until completely dissolved.

Set bowl over very cold water and chill 1/2 hour, stirring occasionally and almost set. Pour mixture into 8 individual 1/2 cup ramekins(or small mason jars) and store in refrigerator. Cover with plastic wrap if making the night before.

To serve, top with fresh fruit or a cooked fruit topping. You can serve in the ramekin, or dip the bottoms in warm water and unmould onto a plate. Sometimes I add shaved chocolate.

Karie was kind enough to take me on a trip to New York. She had rented an apartment, and the first night we dropped off our luggage and went across the road to the first restaurant we saw. For dessert, we ordered Panna Cotta and were both in love! The rest of the week, on our way back to the apartment, we ordered take out Panna Cotta to eat before we went to bed.
When we came home, I was determined to recreate that taste, so for the next year, every time Karie came for dinner, we had a version of Panna Cotta until I made this one. It always wows dinner guests, and in fact, that was the dessert Karie and Dom had at their wedding. Hatsuho was here and helped me the morning of the wedding. I made them in small mason jars with a variety of toppings.
