1/2 cup hot mashed potatoes
1/4 cup butter
1 cup milk
1 tsp salt
1 pkg (tbsp) yeast
1 tsp sugar
1/4 cup warm water
1/2 cup water
1 egg, beaten
3 tbsp sugar
1 tsp grated orange rind
1 tsp cinnamon
3 cups flour
1/2 tsp nutmeg
1/2 cup each, currants, raisins, mixed fruit or peel (or any mixture you want)

Directions:

Combine potatoes, milk, butter, water, sugar and salt in a saucepan. Heat until butter melts. Pour into a large bowl and cool til lukewarm.

Dissolve yeast in 1/4 c warm water and 1 tsp sugar for about 10 minutes, or until frothy.

Sift in 1 cup flour and spices into the first mixture. Add yeast, egg and fruit. Stir in enough flour to make a soft dough. Knead until smooth.

Form into buns, 3" across and cut a cross in the top of each. Place on greased cookie sheets and cover with plastic wrap. Rise until double.

Bake at 400º for 15 minutes. (approximately)

When they are still slightly warm, pipe icing into the crosses.

I have no idea where I found this recipe, definitely not on the internet as that didn't exist when I found it. It's a little heavier than the usual hot cross buns, but they are delicious. Every Easter I used to make them and give them to friends.
