1/4 cup butter
2/3 cups packed brown sugar
9 slices pineapple (14 oz can, drained)
9 maraschino cherries

1-1/3 cup flour
1 cup sugar
1/3 cup shortening
1-1/2 tsp baking powder
1/2 tsp salt
3/4 cup milk
1 egg

Directions:
Directions:
Preheat oven to 350º.
In 9" square pan, melt butter in oven. Sprinkle brown sugar evenly over the melted butter. Arrange pineapple slices over the brown sugar. Place a cherry in the center of each pineapple slice.
Mix remaining ingredients. Pour batter over pineapple.
Bake 50-55 minutes . Immediately place plate upside down over the cake, turn the plate and pan over. Leave the pan over the cake for a few minutes so brown sugar can drizzle over the cake. Serve warm.
