1 cup warm water
1 tsp sugar
2 pkg (tbsp) yeast

4 cup flour
5 cups flour

1/4 cup oil
1//4 cup sugar
2 cups water
8 cups flour
handful of salt

4-5 cups flour

Directions:
Directions:
Mix yeast, sugar and water in ºa small bowl. Dissolve for about 10 minutes, or until frothy.

In a large bowl, add 4 cup flour and 5 cups water and yeast mixture; Mix well and let rise about double. Add oil,, sugar, salt & water and mix well. Pour into a very large bowl with 8 cups flour. Mix well, then knead in another 4-5 cups flour. Knead until smooth and not sticky. Let rise, covered, until double, punch down and let rise again.

Form loaves and place in well greased loaf pans. Cover and let rise until doubled, then bake at 350º until golden brown and there is a hollow sound when you tap the bottom.

This makes 4 or 5 loaves and I freeze the extra loaves for future use.

I woke up to aroma of fresh bread almost every Saturday morning. This huge pan is what Mom used to make it and before she had an eletric stove, it sat on the side of the wood stove, the perfect temperature for rising. She taught me how to 'feel' the dough rather than worry about measurements. So keep in mind that everything is adjustable!
I have attempted to make it a little more healthy and in the second addition of flour, I use 4 c whole wheat flour & 4 c white flour. Then I add various grains, oatmeal, bran, wheat germ, sunflower seeds, etc. It's usually not the same twice in a row.
