1 baked 9-inch pastry shell
5 T. butter
⅓ cup flour
¾ cup firmly packed brown sugar
¼ cup sugar
2 cups milk, scalded
3 egg yolk, beaten
¼ tsp. salt
1 tsp. vanilla
1 T. firm butter
meringue or whipped topping

Directions:
Directions:
Melt 5 tablespoons butter in a heavy saucepan over medium heat. Blend in flour. Stir in sugars. Heat, stirring until sugar is melted and mixture is smooth. Blend in milk, ½ cup at a time, stirring until mixture boils after each addition. Vigorously stir about 3 tablespoons hot mixture into egg yolks; return to pan. Cook 1 minute; stirring constantly. Remove from heat, stir in salt, vanilla and butter. Turn into pastry shell. Top with meringue and bake at 375º preheated oven for 10 minutes or cool and top with whipped cream.
