1 cup cake flour
1 teaspoon sugar
½ teaspoon salt
¾ teaspoon double-acting baking powder
½ teaspoon soda
Wisk dry ingredients until blended

Beat until light:
1 egg

Add:
1 cup buttermilk

Combine the dry and liquid ingredients with a few swift strokes.
Beat in:
2 Tablespoons melted butter.
Avoid stirring too much.

Directions:

Preheat griddle to about 450º. To test if it's ready sprinkle a little bit of cold water on the griddle. If it bounces and sputters the griddle is hot enough. Pour about ⅓ cup of batter onto the griddle for each pancake. Bake for about 2 minutes. turn the cake over and let it bake for about 1 minute.
