4 cups raw oats (not quick or instant)
1/2 cup unsweetened dried flake coconut
1/2 cup chopped or sliced nuts
3 tbsp sunflower seeds (unsalted)
1 tbsp flax seeds
1 tbsp sesame seeds
1/2 cup raw honey or pure maple syrup
3 tbsp coconut oil
1/2 tsp almond extract (optional)
2-4 tsp cinnamon (optional)
1 cup assorted dried fruit (such as apricots, raisins, cranberries, cherries, pineapple, dates)

Preheat oven to 325º.
In a large bowl, mix oats, coconut, nuts and seed to combine.
Heat the honey or syrup with the coconut oil until it boils. Boil for 1 min and remove from heat. Stir in almond extract if using.
Pour this mixture over the oat mixture and stir until coated.
Spread on a large baking sheet.
Bake for 20-25 mins or until lightly toasted, stirring every few minutes to prevent burning.
Let the oats cool completely, then add the dried fruit.
Store in an airtight container.

I bake for 25 minutes, stirring twice at 7 and 8 minutes.

With maple syrup, add 1 tsp maple flavoring.
