6 eggs, beaten
4 cups grated sharp cheddar cheese, or other hard cheese of your liking
20 small square saltine crackers, well crushed
1 onion, finely chopped
1 bunch green onion, chopped
3 - 4 cloves garlic, minced
2 - 12 oz. jars oil marinated artichoke hearts, chopped
Salt & pepper
Red pepper flakes to taste

Directions:
Directions:
Preheat oven to 325º.
Oil a 9 x 13 pan.
Drain artichoke hearts, reserving 3 - 4 tablespoons oil in medium pan.
Saute onions in oil, add garlic, lightly saute, and salt, black pepper and red pepper flakes to taste. Cool slightly before adding to egg mixture.

In a large mixing bowl beat eggs, add all other ingredients, mix thoroughly then put in 9"x13" pan. Bake at 325º for 35-40 minutes just until lightly browned and center is set. Cool. Cut in squares or bars. Serve warm or at room temperature.
