1. Sirloin Steak
2. Thyme leaves, stripped from stems and finely chopped.
3. Beef Demi-Glace
4. Butter

1. Heat a large drizzle of olive oil in a large pan over medium-high heat. Season steak all over with salt and pepper. Add to pan and cook to desired doneness, about 4-7 minutes per side. Remove from pan and let rest for 5 minutes.

2. Add demi-glace, 1/4 cup of water and thyme to same pan, over medium-high heat. Stir, scraping any browned up bits from bottom of pan. Let simmer until thickened. About 1-2 minutes. Remove from heat and add 1 TBSP butter, stirring or swirling pan to melt. Season with salt and pepper.
