½ C salt
½ C ground black pepper
1 ½ C dried honey powder
2 T garlic powder
4 T red chili powder
4 T "pink salt" (nitrate curing salt)
1 C paprika

9lb pork belly from costco

Directions:
Directions:
1) 9 lb pork belly from Costco cut in 3 sections
2) Dry rub and wrap tightly in Plastic wrap and place in zip lock bag.
3) Place in refrigerator turning every evening for 7-10 days
4) Smoke 6 hours at 100-130º in applewood
5) Raise smoker temp to 200º and continue until internal temp at thickest is 150+º
6) Chill overnight unwrapped in refrigerator or ice box
7) Slice, freeze, cook and enjoy
