1 MEDIUM ZUCCHINI, SLICED LENGTHWISE 1/2" THICK.
FLOUR, SALT AND PEPPER TO DREDGE ZUCCHINI
2 EGGS, BEATEN
1 TSP WATER
DRIED BREAD CRUMBS
¼ CUP BUTTER

Directions:
Directions:
Slice zucchini lengthwise, 1/4" thick.


Place eggs into small bowl and beat with fork, adding water to thin.


While melting the butter in large fry pan, dredge zucchini in flour/salt/pepper mixture in plastic bag.


Dredge in beaten eggs/water.


Coat with bread crumbs. Fry until golden brown.
