- 4 chicken breasts, cubed
- ¼ c flour
- 8 tbsp Greek seasoning (or use 2 t each of oregano, lemon pepper, garlic and mint and mix together)
- 1 Tbsp olive oil
- 1 lg onion, sliced lengthwise
- 1 lg green pepper, cut in strips
- 2 Roma tomatoes cut into 8ths (or can used canned diced tomatoes)
- 3 Kalamata olives, sliced
- 3 Tbsp feta cheese, crumbled

(Another option for the Greek seasoning: 2 t oregano, 1 t basil, 1 t cilantro, 2 t garlic, 1 t mint.)

Directions:

Dredge chicken in flour and half the spices.

Saute in the olive oil and remove from skillet. Saute the onion and peppers.

Return chicken to skillet, add rest of seasonings and cook 1-2 minutes. Transfer to serving dish and sprinkle with feta cheese and olives.
