1 medium onion, chopped
1 lb. yellow squash, sliced and quartered
½ stick butter
2 medium carrots, grated
1 egg, lightly beaten
1 c. sour cream
½ package Pepperage Farm Herb Stuffing
salt and pepper

Directions:
Directions:
Cook squash and onion with salt. drain well, add carrots, sour cream, and egg..set aside. Melt butter and brown stuffing. Line greased small baking dish with half stuffing crumbs. Spoon squash mixture over crumbs, top with remaining crumbs. Bake 350º for 30 minutes.
