4 tbsp olive oil
2 cups of chopped leeks or white onion
2 tbsp minced garlic
Kosher salt & pepper
2 cups carrots, peeled and cut into rounds
2 cups peeled and diced potatoes
2 cups of string beans, broken into pieces
2 quarts vegetable broth
4 cups peeled, seeded and diced tomatoes
2 ears of corn, kernels removed
Parsley
Lemon juice
3-4 handfuls of spinach

1. Heat olive oil in a large pot. Add garlic, leeks and a pinch of salt and sweat for 7-8 mins.
2. Add potatoes, carrots and green beans and continue to cook for 4-5 more mins.
3. Add vegetable broth and bring to a simmer. Once simmering, add tomato, corn, spinach and pepper.
4. Reduce the heat to low and cook until vegetable are fork tender, 25-30 mins. Remove from heat and add parsley and lemon juice to taste.
