1 large head of cabbage or two packages coleslaw mix
1 medium carrot
1 cup sweet salad cubes
1 cup mayonnaise
1/2 cup sugar
2 tablespoons white vinegar
Directions:
Directions:
Cut cabbage into fourths. Remove Cores. Cut each fourth into 1 inch strips. Place 1/4 in food processor at a time and Pulse until the consistency you want. Put into a large bowl. Repeat with the rest of the cabbage. Chop carrot into pieces and place in processor and chop until fine. Put into same bowl. Add the sweet salad cubes. Mix well. In a small bowl add mayonnaise, sugar and white vinegar. Mix well. Add 3/4 of the dressing to the vegetables and stir well. If it seems too dry add the rest of the dressing and stir. ( you don’t want it to be too soupy ) place in refrigerator for at least one hour before serving.
