2 cloves Garlic, pressed or minced
2 small leeks, white and light green part only, rinsed and chopped
1 c. nonfat chicken broth
3 small sweet potatoes, cooked and mashed (about 5 cups)
1 egg, beaten
1 c. skim milk
1 c. swiss cheese, shredded (divided)
1/2 tsp. salt
1/2 tsp. fresh ground pepper
1/4 tsp. cayenne or red pepper

Directions:

Spray a large nonstick skillet or fry pan. Heat over a medium high heat and add the garlic and leeks. Saute. Add the broth and simmer until the leeks are tender, until most of the liquid evaporates, about 10 minutes. Remove from heat and let cool slightly. In a large bowl, combine the leek mixture, mashed sweet potatoes, beaten egg, skim milk, 1/2 cup of cheese, salt and pepper. Mix well, then spoon the mixture into a sprayed medium size shallow baking dish or a large gratin dish. Sprinkle with remaining cheese. Place in preheated 375º oven. Bake for 30 minutes, until lightly browned and mixture bubbles.
