1 small spaghetti squash cooked
1 1/2 cups of Ricotta cheese
1/2 cup of Parmesan cheese
1 large egg
1 lb of ground beef browned (or sausage)
1 1/2 cups tomato sauce
1 cup mozarella cheese

Directions:
Directions:
1. Cut squash in half length wise and drizzle with olive oil and salt and pepper. Cook in oven at 400 degrees for 45 minutes to an hour until squash is cooked. (Squash will pull away from its skin and shred into small spaghetti strands)
2. Scoop cooked squash out onto a clean kitchen towel, and squeeze out any excess water.
3. Layer drained spaghetti squash on the bottom of a 9 x 9 baking pan.
4. Mix Ricotta, Parmesan cheese and egg,then spread mixture on top of squash.
5. Layer meat over cheese mixture.
6. Top with Tomato sauce.
7. Top with Mozzarella cheese.
8. Bake at 350 degrees for about 25 to 30 minutes until bubbling hot.


For a variety you can add any type of vegetable you like into the meat mixture (peppers, zucchini, etc). You can also add onion and garlic to the beef when frying along with any spices you may like.
