1 Pound Ground Beef
½ Cup Onion, chopped
1 Teaspoon Chopped Garlic
1 Can (15oz) Tomato Sauce
1 Can (15oz) Diced Tomatoes with Lime & Cilantro
1 Can Black Beans, drained and rinsed
1 Cup Frozen Corn
1 Can (4.5oz) Chopped Green Chilies
2 Teaspoons Chili Powder
1 Teaspoon Cumin
½ Teaspoon Oregano, dried
1 Teaspoon Cilantro, dried
½ Teaspoon Red Pepper Flakes
18 Corn Tortillas, 6 inch
8 Ounces Cheddar Cheese, shredded

1. Preheat oven to 350º F. Spray a 13x9 baking dish with non-stick spray.
2. In a large skillet over medium high heat, brown ground beef, onions and garlic. Remove grease.
3. Add all ingredients except tortillas and cheese. Reduce heat to medium and simmer, stirring occasionally, for 10 minutes.
4. Spread 2 cups of mixture in bottom of baking dish. Top with 9 tortillas, overlapping as needed.
5. Spread another 2 cups of mixture over tortillas followed by ½ of the cheese. Top with remaining tortillas.
6. Spread remaining mixture on top and add remaining cheese to top layer.
7. Bake until bubbly, heated through and cheese is melted, approx 35-45 minutes.

Surprisingly tasty casserole. Use corn tortillas because they will withstand the liquid and length of time needed to cook. Top with fresh cilantro, jalapenos, extra cheese, avacados, salsa, etc ...
