1 sticks (½ cup) unsalted butter, room temperature
¼ c full fat Greek yogurt, plain or vanilla
½ c brown sugar, tightly packed
½ c splenda
1 Tbsp pure vanilla extract
1 jumbo egg
1 jumbo egg yolk
1 tsp baking soda
2 tsp Saigon cinnamon
1 c whole wheat flour
½ c vanilla whey protein powder
2 c old fashioned oatmeal
1 c quick oats

Directions:

Preheat oven to 350º F
Line 2 cookie sheets with parchment paper

In a medium bowl mix together flour, protein powder, cinnamon and baking soda

In a large bowl beat together butter, yogurt, brown sugar, and splenda with hand mixer until completely combined, ~ 1 - 2 minutes
Add egg, egg yolk and vanilla. Beat to combine
Add dry ingredients to wet ingredients and mix until just combined
Add both oats and fold in with a spatula (do not over mix)

Using a cookie scoop, scoop cookie dough onto prepared sheet pans, leaving room between cookies for spreading
Bake ~ 6 - 7 minutes (edges should be light golden brown but middle should still look undercooked) do not overcook, it will ruin the texture
