1 1/2 cups firmly packed brown sugar
1 cup creamy or chunky peanut butter
3/4 cup margarine
1/3 cup water
1 egg
1 teaspoon vanilla
3 cups quick oats
1 1/2 cups flour
1/2 teaspoon baking soda
1 cup semi sweet chocolate chips
2 teaspoon shortening
1/3 cup chopped peanuts (optional)

Beat together brown sugar, peanut butter, and margarine until light and fluffy. Blend in water, egg and vanilla. Combine oats, flour and baking soda, add to previous mixture, blend well. Shape dough into 1 inch balls and place on ungreased cookie sheet. Flatten to 1/4 inch thickness with bottom of glass dipped in sugar. Bake 350º for 8-10 minutes or until edges are golden brown. Remove to wire rack. Cool completely.
Place chocolate pieces and shortening in glass container. Microwave at HIGH 1-2 minutes stirring after 1 minute and then every 30 seconds until chocolate is melted and smooth. Top each cookie with 1/2 teaspoon of melted chocolate; sprinkle with nuts. Place in cool area to set chocolate.
