olive oil
3 large leeks, generous with white parts
3 baking potatoes
6 c. water
a good amount of kosher salt

Directions:
Directions:
Cover bottom of a soup pot with olive oil.

Use white parts of the leeks and some of the softer lighter green parts and discard the stalky, heavy green parts. Chop and rinse leeks well to rid sand.

Saute leeks in olive oil for about five minutes. Add peeled and cubed potatoes, water, and salt. Cook covered about an hour. Puree in blender or with hand immersion blender. Add more water if too thick.
