4 lbs ground beef
(2) 15 oz cans tomato sauce
(2) 15 oz cans diced tomato - not drained
2 cup water
2 cup finely chopped onion
3 stalks celery, finely chopped
4 tsp salt - to taste
10 Tbsp Paprika - good quality
10 tsp oregano
7 tsp cumin
8 tsp garlic powder
1 tsp onion powder
1 tsp Cayenne pepper - adjust for HEAT

(2) 15 oz cans pinto beans - not drained
(2) 15 oz cans Kidney beans - not drained
(1) green pepper chopped
(1) red pepper chopped

Brown ground beef and drain. Add all the ingredients except the beans and peppers. Simmer and stir uncovered 1 hr. Add remaining ingredients and simmer and stir covered 1 hr.

I wanted a chili recipe that I could make that tasted consistent and was not dependent upon a store chili seasoning packet. I always felt I had to doctor chili to get it to taste right and could never get chili to taste the same twice in a row. This is my attempt at a consistent chili without a seasoning packet. In theory, you could combine the seasonings and create your own seasoning packet, store it in a cool dry place, and measure it out accordingly as needed.

I tried a small amount of smoked Paprika, and it changed the flavor of the chili too much. Stick with a good non smoked paprika. I get mine in bulk at the organic section of the store.

The freshness and quality of the spices definitely affect the flavor, adjust as necessary.
