3 C fresh pineapple juice (or canned)
1 C white wine vinegar
2 T soy sauce
2 T fresh ginger minced
1/4 C packed brown sugar
2 T dijon mustard
2 T fresh lime juice
kosher salt and fresh ground black pepper

Directions:
Directions:
1. Combine pineapple juice, vinegar, soy sauce, ginger and brown sugar in med saucepan and bring to boil over high heat. Reduce heat to medium and simmer stirring occasionally until the volume is reduced by half (2-25 min).
2. Remove from heat and whisk in the mustard, and lime juice. And season with salt and pepper. let cool to room temp. Glaze can be made up to 1 day in advance and refrigerated. Bring back to room temp before using. Spoon glaze over salmon in a rimmed pan and bake at 450 for 12 minutes.
3. Serve with "Cilantro Mint Chimichurri" recipe in Sauces section.
