7 Small to medium Honey Crisp Apples
⅓ Cup Brown Sugar
1½ Tablespoons Ground Cinnamon
3 Cups Flour
1 Cup White Sugar
¾ Cup Brown Sugar
2½ Teaspoons Baking Powder
½ Teaspoon Salt
4 Large Eggs
2 Sticks (1 Cup) Butter, melted and cooled slightly
½ Cup Orange Juice
1 Tablespoon Vanilla Extract
½ Cup Powdered Sugar

1. Preheat oven to 350º F. Butter a 13x9 metal baking pan and add the 2 tablespoons of flour to coat sides well.
2. Wash, pare, core and slice apples into ¼ inch thick slices. Add to medium bowl with cinnamon and ⅓ cup brown sugar. Mix well and set aside.
3. Mix 3 cups flour, sugars, baking powder and salt in a large bowl. Whisk eggs in a small bowl. Make a well in center of flour mixture and pour in melted butter, orange juice, vanilla and beaten eggs. Using a spatula, gently fold the wet and dry ingredients until the flour is just moistened. Do not overmix.
4. Spread ⅔ of the batter in the bottom of the baking pan. Gently layer apples on top making sure none of the apples touch the pan. Dollop remaining batter on top of the apples. It is OK if the apples are not completely covered.
5. Bake for about 50 minutes until top is browned and wooden toothpick inserted in middle comes out clean.
6. Stir 2 teaspoons of cold water into powered sugar in a small bowl. Drizzle glaze over cake.
7. Cake can be served warm or heated just prior to serving.

Wonderful apple "cake". Not very sweet, texture of cake is dense and the apples are satisfying. Almost a coffee cake!
