2 lbs. chopped sirloin steak
2 tsp. kosher salt
1 tsp. ground pepper
1 cup flour
3 eggs beaten
¼ cup olive oil
2 cups chicken broth
½ cup milk
½ tsp. fresh thyme

Directions:
Directions:
Preheat oven to 250º
Season the meat on both sides with salt and pepper. Place the flour into a pie pan. Place eggs into a separate pie pan. Dredge the meat on both sides in the flour. Followed by egg mixture then the flour. Allow to sit for 10 min.
Place enough oil to cover the bottom of a 12 in. skillet set to med. high heat. Once the oil begins to simmer, add the meat in batches. Cook each piece on both sides until golden brown, about 4 min. per side. Remove steaks and place in oven to keep warm, while frying additional meat.
After meat is fried:
Add 1 tsp. of oil to pan, whisk in 3 Tbsp. of flour left over from dredging. Add chicken broth and deglaze the pan. Whisk until the gravy comes to a boil and begins to thicken. Add the milk and thyme stir until thick. Season to taste with salt and pepper.
Serve the gravy over the steaks.
