1 cup (2 sticks) butter or margarine, softened
2 cups packed brown sugar
2 eggs
2 teaspoons vanilla
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups quick oats
1 1/3 cups (8oz.) Bits 'O Brickle toffee bits
1 cup sweetened coconut (optional)

Directions:
Directions:
Beat butter, brown sugar, eggs and vanilla with electric mixer on medium speed in large bowl until well blended. Add flour, baking soda, cinnamon and salt, beat until well blended. Stir in oats, toffee bits and coconut. Drop by rounded teaspoon 2 inches apart onto lightly greased cookie sheet. Bake 375º for 8-10 minutes or until edges are lightly browned. Cool 1 minute then transfer to wire rack.
