2 pounds potatoes
1 C + 3 T butter
6 chicken bullion cubes
2 ¼ t tabasco sauce
cheddar cheese
1 T chervil
3 C diced onion
1 ¼ t ground peppercorns
3 ¼ C heavy cream
cooked bacon, crumbled
7 C water
1 C + 3 T flour
1 bay leaf
1 ⅔ C half and half
diced scallions

Directions:
Directions:
Melt butter in steam kettle, add onion and bay leaf, sauté until translucent (do not brown). Add flour and cook on low for 10 minutes (do not brown). Combine water, bullion, pepper, tabasco and chervil. Slowly add to flour mixture and stir until a thick base is formed. Pour in half and half and cream. Mix well. Add potatoes and cook until tender but not mashed. Remove bay leaf and throw away. Serve with cooked bacon pieces, cheese and scallions.
