2 ½ c. all-purpose flour
1 tbsp. cocoa powder
1 tsp. salt
1 tsp. baking soda
2 c. granulated sugar
2 eggs
1¼ c. vegetable oil
1 c. buttermilk
1 tbsp. white vinegar
1 tsp. real Watkins vanilla
2 oz. red food coloring

Preheat oven to 350º.

Grease and flour (I use Baker’s Joy with flour in spray) two 8-inch round cake pans.

Lightly whisk eggs in a small bowl with a fork and set aside.

Sift flour, cocoa, salt, baking soda in medium mixing bowl and add sugar. Mix together.

Combine together eggs, oil, buttermilk, vinegar, vanilla, red food coloring.

Mix with dry ingredients in mixing bowl for one minute or until combined well. Pour into prepared cake pans evenly.

Bake 30 minutes or until toothpick comes out clean.

After 10 minutes of cooling cakes on counter, wrap them, individually, in plastic wrap and put in freezer for 1 hour.

**Prepare cream cheese frosting while cakes are in freezer.

Assemble cake only after cake layers have been in freezer for 1 hour or more.
