Ingredients: 1 (7 oz.) bag of coconut flakes (I use unsweetened) ½ c. pecan topping or pieces, chopped 1 (15.25 oz.) chocolate cake mix (I use Pillsbury sugar free Devil’s Food) 1 (8 oz.) cream cheese, softened 1 box powdered sugar ½ c. butter, softened

Directions:Preheat oven to 350º.
Spray bottom of pan and spread coconut evenly at bottom. Sprinkle chopped pecan pieces/topping over coconut.
Make cake as directed on box and pour over coconut/pecan topping in pan.
Mix cream cheese, butter and powered sugar in bowl until smooth.
Add dollops of cream cheese mixture on top of cake mix.
Use a knife to marble cream cheese into cake mixture evenly.
Bake for 40-60 minutes or until cake is no longer jiggly in center. Do not over bake.
Let cool 2 hours before serving. |

Notes: I make my version of this recipe as sugarfree as possible so I can enjoy it. But you can also make it the regular way with regular chocolate cake mix and sweetened coconut. It’s good either way.
