Shrimp Fajita Tacos Recipe

1-2 lb. shrimp, raw, peeled, deveined
1 tbsp. butter
1 tbsp. olive oil
1 medium white onion, sliced
1 green bell pepper, sliced
2 tbsp. fajita seasoning (see ingredients list)
1 garlic clove, minced
½ fresh lime
2 tbsp. honey (I use sugar free)
Flour Tortillas
Garnish: sour cream, cilantro, salsa, shredded cheese, shredded lettuce, avocado (optional)

Fajita Seasoning:
2 tbsp. cornstarch
4 tsp. chili powder
2 tsp. salt
2 tsp. paprika
1 tsp. sugar (I use ½ tsp. Splenda sugar blend)
1 tsp. onion powder
¾ tsp. cumin
½ tsp. garlic powder
½ tsp. Tony’s cajun seasoning

Mix fajita seasoning together in small bowl and set aside.

Mix fresh lime juice and honey together in small bowl and set aside.

Clean, rinse and dry shrimp and place in medium bowl. Add 2 tbsp. fajita seasoning to shrimp, coat well, cover and set aside.

Slice medium onion and green pepper and set aside.

Heat butter and olive oil in cast iron skillet on medium heat. Add onion, green pepper and garlic; sauté 3-5 minutes before adding shrimp.

Continue cooking by adding shrimp to sautéed veggies.
Do not cook shrimp longer than 3 minutes.

One minute after adding shrimp to veggies in skillet, drizzle lime juice/honey mixture over shrimp and vegetables.

Once shrimp looks done, remove from heat and place in medium bowl. Cover until ready to serve.

Cut large tortillas in half or use small flour tortillas. Put 1 tbsp. of shrimp fajitas in tortillas then garnish with preferred toppings.

*Substitute meat in this recipe to also make chicken or beef fajitas.
