5 lb. boneless beef chuck (sirloin or butt), thawed
All-purpose flour
2 tbsp. olive oil
¼ c. yellow or white onion, sliced
¼ c. green bell pepper, sliced
Water (enough to cover top of roast)

Seasonings per side:
1 tbsp. salt
1 tsp. black pepper
1 tsp. meat tenderizer
1 tsp. accent
1 tsp. onion powder
½ tsp. garlic powder

Directions:

Rinse and dry beef; place on large plate. Season both sides of beef with seasonings listed above.

Use all-purpose flour to cover both sides of beef (so it can form a crust over meat before placing in slow cooker).

Heat cast iron skillet with olive oil on medium-high heat. Place beef in hot skillet and brown both sides 2-3 minutes.

Remove from skillet and place in slow cooker. Add onions, green bell peppers and water to slow cooker.

Cook meat on high 4-6 hours or slow for 6-8 hours.

Family Favorite! I’ve been making this roast recipe since I was an adolescent. I still use the same pot I used as a little girl to make it. Hopefully, the pot will hold up to pass down to my girls.
