Ingredients: 1 Angel Food cake long or round
W/ Strawberry Thickening: 1 qt Strawberries 2/3 c Water 1 c Sugar 3 tbsp. Cornstarch 1/3 c Water (cold) 1/8 tsp Salt
Delicious Variation/Topping: 1 4oz Instant Vanilla Pudding (can be sugar free) 1 15oz Crushed Pineapple (w/ juice) 1 8oz Cool Whip (lite)
Lemon Custard Cake: 1 prepared angel food cake 10" 1 pkg Instant Lemon Pudding Mix 1 1/2 c Cold Milk 1 c Sour Cream (8oz) 1 can Cherry or Strawberry Pie Filling (21oz)

Directions: |
Directions:Cook 1 cup of strawberries with 2/3 c water until soft. Mix 1 c sugar with 3 tbsp cornstarch, and 1/3 c water. Then add to strawberry mixture and cook until clear. (add red food coloring) LET COOL! Put in baked pie crust or with cake. Serve with Ice cream or whipped cream. Put in the fridge until ready to eat.
Delicious Variation/Topping: Break or slice angel food cake & lay in a 9 x 13" dish or casserole then mix. Then add pudding & pineapple with juice and mix it up good. Then add cool whip and mix well. Pour over the angel food cake and refrigerate. Can add more cool whip on top if you wish.
Lemon Custard Cake: Tear angel food cake into bite size pieces and place into a 13 x 9 x 2" pan or dish. In mixing bowl combine pudding mix, milk, and sour cream. Beat until thickened about 2 minutes. Spread over the torn cake. Spoon pie filling on top of mixture. Chill until ready to serve. Serves 12-16. |
